Let’s Make Pomegranate Lemonade!

Summer is here and it’s time to stop making hot tea and coffee and switch to iced beverages. This recipe combines a summer classic, lemonade, with a favourite Israeli ingredient: pomegranate seeds!

This sweet drink will definitely treat you this summer. Try using fresh pomegranate seeds for the best results.

Ingredients

  • 1/2 cup pomegranate arils (seeds)
  • 2 lemons
  • 1/4 cup simple syrup

Directions

To a Collins glass, add 1/4 cup of pomegranate seeds. By the way, a standard Collins glass is about 10 to 12 ounces. Any glass will work but because this drink is hand crafted, you will need to account for volume if using another glass.

Using a muddler, smash the seeds in the bottom of the glass, releasing all of the juice. Do this carefully as to not spray pomegranate juice everywhere.

Fill the glass with crushed ice. Some sliced lemons for presentation are nice but not required.

Juice one lemon in each glass and add two tablespoons of simple syrup. You might have to adjust this based on the size and how juicy your lemons are.

Simple syrup is easy to make and great to have on hand for homemade drinks like this lemonade, or even your morning coffee. For one cup of simple syrup, simply warm 3/4 cup sugar and 3/4 cup water over a low heat until combined. The syrup will last about a week.

Now top off your glass with some water and you are set! Enjoy.
